Don’t you just love all the fresh fruits and veggies that summer time provides? For us the start of summer brings more time spent grilling and simpler meals prepared with these fresh ingredients. Whether you’re growing your own in your garden, or buying them from the local farmers market, you just can’t get that same bursting with flavor taste at other times of the year.
This is one of our FAVORITE recipes and it really compliments those wonderful tomatoes and cucumbers that are available in abundance this time of year. Super simple and super fresh! We love salad anyways. We are a salad family. But this one for some reason really stands out. We serve it along side grilled meats, usually lamb, but it has even been a go-to when I need a side dish to bring to a get together or potluck.

2 medium cucumbers
2 large tomatoes
1/4 red onion
1 cup crumbled feta cheese
1 Tbs extra virgin olive oil
1 1/2 tsp oregano
Chop the cucumbers and tomatoes into chunks. Slice the onion very thin. Add all the ingredients to a salad bowl and give it a light toss.
